A nourishing and delicious twist on traditional sticky chicken bowls, featuring tender chicken marinated in a sweet-and-sour glaze, served over wholesome grains and colorful veggies.

Ingredients

  • 1 pound chicken breast, diced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon ginger, minced
  • Cooked brown rice or quinoa
  • Steamed broccoli
  • Sliced carrots
  • Green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix together the soy sauce, honey, apple cider vinegar, sesame oil, garlic, and ginger to create the marinade.
  2. Marinate the diced chicken in the mixture for at least 30 minutes.
  3. Heat a skillet over medium heat and add the marinated chicken. Cook until the chicken is cooked through and the sauce has thickened, about 8-10 minutes.
  4. Serve the sticky chicken over a bed of cooked brown rice or quinoa.
  5. Top with steamed broccoli, sliced carrots, green onions, and sesame seeds for garnish.

Notes

For meal prep, marinate the chicken the night before. Can substitute chicken with tofu or shrimp for different variations.
