A vibrant dish featuring sautéed seasonal vegetables, packed with flavor and nutrition.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced (any color)
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 cup broccoli florets
  • 1 cup baby spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Wash and prep all the vegetables.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the sliced onion and sauté for 3-4 minutes.
  4. Incorporate the minced garlic and sauté for an additional 1 minute.
  5. Add the bell pepper, zucchini, yellow squash, and broccoli to the skillet.
  6. Cook the mixture for about 5-7 minutes, stirring occasionally.
  7. Add the baby spinach and cook for an additional 1-2 minutes until wilted.
  8. Sprinkle in the dried oregano, dried basil, salt, and pepper to taste.
  9. Finish with a squeeze of fresh lemon juice.
  10. Serve hot or at room temperature.

Notes

Serve as a side dish or a light main course. Great with quinoa or on pasta.
