Delicious and nutritious banana muffins made with wholesome ingredients, perfect for breakfast or a snack.

  • 3 ripe bananas
  • 1/2 cup natural creamy or crunchy peanut butter
  • 2 eggs
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup dairy-free milk of choice
  • 1 1/2 cups oat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the ripe bananas until smooth in a large bowl.
  3. Add the peanut butter, eggs, maple syrup, vanilla extract, and dairy-free milk to the mashed bananas. Mix until well combined.
  4. Whisk together oat flour, baking powder, cinnamon, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet banana mixture, stirring just until combined.
  6. Fold in the mini chocolate chips gently.
  7. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use overripe bananas for maximum sweetness. Can substitute oat flour with regular flour.
