A healthier version of the classic lemon bars, balancing sweetness and tartness while using wholesome ingredients.

Ingredients

  • 1/4 cup maple syrup
  • 1/3 cup ghee, melted and cooled
  • 1 large egg
  • 2/3 cup Bob’s Red Mill Coconut Flour
  • 1/4 cup Bob’s Red Mill Tapioca Flour
  • ½ teaspoon lemon zest
  • 2 teaspoons vanilla extract
  • 1/2 cup lemon juice, freshly squeezed
  • 1 1/2 tablespoons lemon zest
  • 1/3 cup maple syrup (for the filling)
  • 4 large eggs (for the filling)
  • 2 tablespoons tapioca flour (for the filling)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, combine the maple syrup, cooled melted ghee, vanilla extract, and one egg.
  3. In a separate bowl, whisk together the coconut flour, tapioca flour, and ½ teaspoon lemon zest.
  4. Add the wet mixture to the dry ingredients and stir until it forms a dough-like consistency.
  5. Press the dough evenly into an 8×8-inch baking pan lined with parchment.
  6. Bake the crust for 8-10 minutes until just set and slightly golden.
  7. Whisk together the 4 eggs, 1 ½ tablespoons lemon zest, 1/3 cup maple syrup, lemon juice, and 2 tablespoons tapioca flour in a bowl until smooth.
  8. Once the crust is done, pour the lemon filling evenly over it.
  9. Lower the oven temperature to 325°F and bake for 14-16 minutes.
  10. Let the bars cool completely at room temperature and then refrigerate for at least 90 minutes.
  11. Cut into 9 squares and serve chilled.

Notes

Serve with whipped topping or powdered sugar. Store in an airtight container in the fridge for up to a week.
