Delicious energy cookies made with wholesome nuts, seeds, and dried fruits, perfect for a healthy snack.

Ingredients

  • 1 cup oats
  • 1/2 cup mixed dried fruits (raisins, cranberries, or apricots)
  • 1/2 cup assorted nuts (almonds, walnuts, or pecans), chopped
  • 1/2 cup seeds (sunflower seeds, pumpkin seeds, or chia seeds)
  • 1/4 cup nut butter (almond butter or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a mixing bowl, combine oats, dried fruits, nuts, seeds, and salt.
  3. Whip up the wet ingredients: In a separate bowl, mix nut butter, honey (or maple syrup), and vanilla extract until smooth.
  4. Combine wet and dry: Pour wet ingredients into the dry ingredients and mix until fully combined.
  5. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, pressing them down slightly.
  6. Bake for 10-12 minutes, or until lightly golden.
  7. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. Store in an airtight container for up to one week.
