A delightful chicken salad featuring tender chicken, juicy grapes, and crunchy almonds in a creamy Greek yogurt dressing, perfect for lunches or light dinners.

Ingredients

  • 3 cups cooked chicken, chopped or shredded
  • 2 stalks celery, diced
  • 1 cup red grapes, halved
  • 1/2 cup thinly sliced almonds
  • 3 green onions, sliced
  • 2 Tbsp parsley, finely chopped
  • 3/4 cup plain Greek yogurt
  • 1 Tbsp Dijon mustard
  • 3 Tbsp fresh lemon juice
  • 1/2 tsp celery seed
  • 1 tsp salt
  • 1/2 tsp cracked black pepper

Instructions

  1. In a large bowl, mix together the chopped chicken, diced celery, halved grapes, sliced almonds, green onions, and parsley until evenly distributed.
  2. In a separate bowl, whisk together the Greek yogurt, Dijon mustard, lemon juice, celery seed, salt, and black pepper until smooth.
  3. Drizzle the dressing over the chicken mixture, and gently mix until all ingredients are coated.
  4. Cover the salad and refrigerate until ready to serve to enhance the flavors.
  5. Serve chilled with crackers, in a wrap, or on a bed of lettuce.

Notes

Use leftover rotisserie chicken for a quick meal. Adjust ingredient amounts based on personal preference.
