  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth (or chicken broth)
  • 1 cup green beans, chopped
  • 1 cup pasta (small shapes like ditalini or orzo)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Sauté the aromatics by heating the olive oil in a large pot over medium heat, adding onion, carrots, and celery, and cooking until softened.
  2. Introduce the garlic and cook until golden and fragrant.
  3. Add the diced tomatoes, stirring to combine.
  4. Pour in the broth and bring to a boil.
  5. Add the green beans and simmer for about 10 minutes.
  6. Incorporate the pasta, cooking according to package instructions until al dente.
  7. Season with basil, oregano, salt, and pepper before serving, garnished with fresh basil.

Notes

Serve with crusty bread or a fresh mixed greens salad. For extra depth, add a splash of balsamic vinegar before serving.
