Juicy grilled shrimp marinated in a zesty blend of lemongrass, chili, and lime, served over fragrant basil fried rice.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons lemongrass, minced
  • 2 tablespoons chili paste
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt to taste
  • 1 cup jasmine rice
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1/2 cup fresh basil, chopped
  • 1 lime, sliced for serving

Instructions

  1. Prepare the Marinade: In a bowl, combine the minced lemongrass, chili paste, olive oil, lime juice, and salt. Add the shrimp, ensuring they are evenly coated. Let sit for at least 30 minutes.
  2. Cook the Jasmine Rice: Bring 2 cups of water to a boil in a saucepan. Add the jasmine rice, reduce heat, cover, and let simmer according to package instructions.
  3. Stir-Fry the Basil Rice: Heat olive oil in a large pan over medium heat. Add cooked jasmine rice, soy sauce, and fresh chopped basil. Stir until well combined and heated through.
  4. Grill the Marinated Shrimp: Preheat the grill to medium-high heat. Grill shrimp for 2-3 minutes on each side until opaque and slightly charred.
  5. Serve with Love: Serve grilled shrimp over basil fried rice and garnish with lime wedges.

Notes
