Juicy grilled chicken paired with vibrant broccoli and a rich, creamy garlic sauce, perfect for summer evenings with loved ones.

Ingredients

Scale
  • 2 chicken breasts
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: cooked rice or quinoa for serving

Instructions

  1. Prepare the Grill: Preheat the grill to medium-high heat. Season the chicken breasts generously with olive oil, salt, and pepper. Place the chicken on the grill and cook for about 6-7 minutes on each side or until fully cooked. Allow the chicken to rest for a few minutes before slicing it; this ensures it’s juicy and tender.
  2. Blanch the Broccoli: In a pot, bring water to a boil. Add the broccoli florets and cook them for 3-4 minutes until they turn bright green and are tender-crisp. Drain the broccoli and set it aside.
  3. Sauté the Garlic: In a saucepan, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Create the Creamy Sauce: Pour in the heavy cream and stir in the grated Parmesan cheese, allowing the mixture to come together into a smooth, luscious sauce. Season it with salt and pepper to taste.
  5. Assemble the Bowls: Place a scoop of cooked rice or quinoa in each bowl. Top with slices of grilled chicken and the blanched broccoli, then drizzle generously with the creamy garlic sauce.

Notes

For added flavor, marinate the chicken before grilling. Pair with a fresh salad and crisp white wine for a complete meal.
