Delicious Green Chile Chicken Enchiladas filled with shredded chicken and topped with green chile sauce and cheese.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup green chile sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded cooked chicken, green chile sauce, cumin, garlic powder, salt, and pepper in a bowl.
  3. Warm the corn tortillas in a pan or microwave to soften them.
  4. Spoon the chicken mixture into each tortilla, roll them up, and place them seam-side down in a greased baking dish.
  5. Pour any remaining green chile sauce over the top and sprinkle with shredded cheese.
  6. Bake for 20-25 minutes, or until the cheese is bubbling and golden brown.
  7. Serve with diced onions, sour cream, and fresh cilantro.

Notes

Great with a side of salad or Mexican rice. Can be made vegetarian by substituting meat with beans or veggies.
