A simple yet flavorful dish featuring roasted carrots enhanced with honey and thyme, served with creamy whipped feta.

Ingredients

  • 1 pound carrots
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 4 ounces feta cheese
  • 4 ounces cream cheese
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the carrots into sticks.
  3. Toss the carrots with olive oil, honey, fresh thyme, salt, and black pepper.
  4. Spread the carrots on a baking sheet and roast for 20-25 minutes.
  5. Combine feta cheese, cream cheese, and lemon juice in a food processor and blend until smooth.
  6. Serve the roasted carrots topped with whipped feta.

Notes

Store leftover roasted carrots in an airtight container for up to 3 days. Whipped feta can be kept for about a week.
