Delightful and refreshing skewers featuring cucumber, feta, cherry tomatoes, and Kalamata olives, perfect for any occasion.

Ingredients

  • 1 large cucumber, cut into thick half-moon slices
  • 6 oz feta cheese, cut into small cubes
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives, pitted
  • Fresh dill or parsley for garnish
  • 2 tbsp olive oil (for drizzle)
  • 1 tsp lemon juice (for drizzle)
  • ½ tsp dried oregano (for drizzle)
  • Black pepper to taste (for drizzle)

Instructions

  1. Prepare the Ingredients: Cut the cucumber and feta cheese into bite-sized pieces.
  2. Assemble the Skewers: On each toothpick or mini skewer, layer cucumber slice, feta cube, cherry tomato, and Kalamata olive.
  3. Arrange on a Platter: Place all assembled skewers onto a serving platter.
  4. Mix the Drizzle: Whisk olive oil, lemon juice, dried oregano, and black pepper in a small bowl.
  5. Drizzle and Garnish: Lightly drizzle the lemon-olive oil mixture over the skewers and sprinkle chopped dill or parsley on top.
