  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges for serving

Instructions

  1. Prepare the marinade by whisking together olive oil, fresh lemon juice, dried oregano, garlic powder, onion powder, salt, and pepper in a large bowl.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C) and let the chicken come to room temperature.
  4. In a large oven-safe skillet, heat a drizzle of olive oil over medium-high heat and sear the marinated chicken for 3-4 minutes on each side until golden-brown.
  5. Remove the skillet from heat and sprinkle crumbled feta and Kalamata olives over the chicken breasts.
  6. Bake in the preheated oven for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Garnish with fresh parsley and serve hot with lemon wedges.

Notes

Marinate the chicken overnight for the best flavor. This dish pairs well with a Greek salad and warm pita bread.
