  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prepare the Marinade: In a large bowl, combine the olive oil, fresh lemon juice, dried oregano, garlic powder, onion powder, salt, and pepper. Whisk until well blended.
  2. Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat the Oven: Preheat your oven to 400°F (200°C) and let the chicken come to room temperature.
  4. Sear the Chicken: Heat a drizzle of olive oil in a large oven-safe skillet over medium-high heat. Sear the marinated chicken for 3-4 minutes on each side until golden brown.
  5. Add Toppings: Remove the skillet from heat and sprinkle crumbled feta and sliced olives over the chicken.
  6. Bake the Chicken: Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through, reaching an internal temperature of 165°F (75°C).
  7. Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve hot with lemon wedges.

Notes
