Deliciously chewy brownies topped with glossy ganache and colorful rainbow candy-coated chocolate chips.

Ingredients

  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup Dutch-process cocoa powder
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • 2 large eggs (room temperature)
  • ½ cup all-purpose flour
  • 1 tbsp cornstarch
  • ¼ cup heavy cream
  • 4 oz semisweet chocolate (chopped)
  • Pinch of salt
  • 2–3 tbsp rainbow candy-coated chocolate chips (Wilton rainbow chips or similar)

Instructions

  1. Melt the butter in a medium saucepan over low heat.
  2. Combine the granulated sugar, brown sugar, Dutch-process cocoa powder, and salt.
  3. Add the vanilla extract and eggs, one at a time.
  4. Incorporate dry ingredients by folding flour and cornstarch into the batter.
  5. Bake the brownie batter in a lined 8×8-inch baking dish at 350°F (175°C) for 25-30 minutes.
  6. Prepare the ganache by heating heavy cream and mixing with chopped semisweet chocolate.
  7. Cool the brownies for 10 minutes before drizzling ganache on top.
  8. Add rainbow candy-coated chocolate chips and chill in the fridge until set.

Notes

For added crunch, consider incorporating chopped nuts into the batter.
