A vibrant and flavorful Jamaican dish that transforms humble cabbage into a colorful centerpiece with a medley of spices.

Ingredients

  • 1 head of cabbage, chopped
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Stir in the bell pepper, cabbage, thyme, allspice, salt, and pepper.
  4. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender.
  5. Remove from heat and add apple cider vinegar.
  6. Toss everything together and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or in the microwave.
