A delightful dessert combining gingerbread flavors with rich coffee, perfect for the holiday season.

Ingredients

  • 2 cups Gingerbread cookies
  • 1 cup Heavy cream
  • 1/2 cup Espresso or strong coffee
  • 1/4 cup Sugar
  • 1 tablespoon Gelatin
  • 1 teaspoon Spices (ginger, nutmeg, cinnamon)
  • 1 teaspoon Vanilla extract
  • Chocolate for glazing (optional)

Instructions

  1. Crush the gingerbread cookies into fine crumbs.
  2. Whip the heavy cream until soft peaks form.
  3. Combine the coffee, sugar, and spices in a separate bowl.
  4. Dissolve the gelatin in warm water and mix it into the coffee mixture.
  5. Fold the coffee mixture into the whipped cream gently.
  6. Spoon the mousse into dome molds and chill until set.
  7. Remove the mousse from molds and glaze with chocolate if desired.
  8. Serve chilled.

Notes

Make sure to whip the cream just to soft peaks; over-whipping can make it grainy. For extra gingerbread flavor, sprinkle some crushed gingerbread cookies on top before serving.
