A simple yet flavorful dish featuring cod fillets glazed with a sweet and tangy ginger-soy mixture, perfect for quick weeknight dinners or impressing guests.

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 4 pieces cod fillets
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the soy sauce, honey, grated ginger, minced garlic, and rice vinegar.
  3. Place the cod fillets on the prepared baking sheet and season with salt and pepper.
  4. Brush the soy-ginger mixture generously over each cod fillet.
  5. Bake in the preheated oven for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork.
  6. While the cod is baking, chop the green onions and toast the sesame seeds in a dry skillet.
  7. Once the cod is done, remove it from the oven and garnish with the chopped green onions and toasted sesame seeds.
  8. Serve hot, alongside your choice of sides like steamed rice or a fresh green salad.

Notes

For enhanced flavor, marinate the fish in the soy-ginger mixture for 30 minutes before cooking.
