Delightful Ginger-Cream Bars combining a buttery base with a tangy cream cheese layer, infused with fresh ginger.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground ginger

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and grated fresh ginger until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Spread half of the batter into the prepared baking pan.
  7. In another bowl, mix the cream cheese, powdered sugar, lemon juice, and ground ginger until smooth.
  8. Spread the cream cheese mixture over the batter in the pan.
  9. Drop spoonfuls of the remaining batter over the cream cheese layer and gently swirl together with a knife.
  10. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow the bars to cool in the pan before cutting into squares and serving.

Notes

Serve warm or at room temperature. Best paired with vanilla ice cream or whipped cream.
