A delightful bowl of Garlic Tomato Chickpea Rice, celebrating heartwarming Mediterranean flavors.

Ingredients

  • 1 cup rice
  • 1 can chickpeas, drained and rinsed
  • 2 cups diced tomatoes (canned or fresh)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large skillet over medium heat, add the olive oil.
  3. Add the chopped onion to the skillet.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the diced tomatoes and chickpeas to the skillet, along with cumin, salt, and pepper.
  6. Once the rice is cooked, gently fold it into the skillet.
  7. Garnish with a sprinkle of fresh parsley before serving.

Notes

For added flavor, use fresh herbs and a squeeze of lemon juice when serving. Leftovers can be stored for up to 3 days.
