A comforting and aromatic dish featuring marinated chicken breasts infused with garlic and fresh herbs, served with creamy mashed potatoes and a rich balsamic glaze.

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • ½ cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar

Instructions

  1. Prepare the chicken by patting dry and seasoning with salt and pepper. Rub the herb mixture over the chicken breasts and let rest for 10 minutes.
  2. Sear the chicken in olive oil over medium-high heat for 5-6 minutes until golden brown. Flip and cook for another 5-6 minutes, adding butter to baste.
  3. Create the pan sauce by adding brown sugar and balsamic vinegar to the skillet, stirring until dissolved. Pour in chicken broth and simmer until reduced.
  4. Boil the potatoes in salted water until fork-tender, then drain and return to the pot.
  5. Mash the potatoes with butter and heavy cream until smooth. Season to taste.
  6. Assemble the dish by placing mashed potatoes on a plate, topped with chicken and drizzled with pan sauce. Serve hot.
