This Garlic Chicken Zucchini Noodles Stir Fry is a comforting and healthy weeknight meal, featuring tender chicken, vibrant vegetables, and a flavorful sauce, all ready in under 30 minutes.

  • 1 lb chicken breast, sliced
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 2 medium zucchini, spiralized
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Heat 1 tablespoon of olive oil in a large pan or wok over medium-high heat. Add the sliced chicken, season with salt and pepper, and stir-fry for 5-7 minutes until cooked through. Remove and set aside.
  2. Add another tablespoon of olive oil to the pan. Sauté minced garlic over medium heat until fragrant, about 1 minute.
  3. Add sliced red bell pepper and julienned carrots to the pan and stir-fry for 3-4 minutes until softened.
  4. In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, and red pepper flakes.
  5. Return chicken to the pan, pour the sauce over, and stir well to combine, cooking for an additional 2-3 minutes as the sauce thickens.
  6. In another pan, heat the remaining tablespoon of olive oil over medium heat. Add the spiralized zucchini noodles and sauté for about 2 minutes until tender yet firm.
  7. Combine the zucchini noodles with the chicken and vegetable stir-fry, tossing until well mixed and the noodles are coated with sauce.
  8. Garnish with chopped green onions and sesame seeds before serving.

Notes

This dish pairs well with steamed jasmine rice or a light cucumber salad. Perfect for leftovers, as the flavors deepen over time.
