  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, melt the butter and mix in the minced garlic, salt, pepper, and dried parsley.
  4. Add the halved potatoes to the bowl and toss until well coated.
  5. Spread the potatoes in a single layer on a baking sheet.
  6. Sprinkle the grated Parmesan cheese generously over the potatoes.
  7. Roast in the oven for 25-30 minutes, flipping halfway through.
