Delightful Funfetti Cookie Sandwiches filled with creamy frosting, bursting with colorful sprinkles.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup rainbow sprinkles
  • 1 cup frosting (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together softened butter, granulated sugar, and brown sugar until smooth and fluffy.
  3. Beat in eggs one at a time and stir in vanilla extract.
  4. In another bowl, combine flour, baking powder, baking soda, and salt, then gradually blend into the wet mixture.
  5. Fold in rainbow sprinkles.
  6. Drop spoonfuls of dough onto ungreased baking sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Cool cookies on the sheet for a few minutes before transferring to a wire rack.
  9. Spread frosting on the bottom of one cookie and top with another to create a sandwich.
