  • 2 tablespoons melted butter (or coconut oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the Dry Ingredients: In a bowl, mix oat flour, baking powder, salt, and optional sugar until well combined.
  2. Whisk the Wet Ingredients: In another bowl, whisk together the milk, egg, melted butter (or coconut oil), and vanilla extract until smooth and creamy.
  3. Combine Wet and Dry Ingredients: Gently fold the wet and dry ingredients together until just mixed. Be careful not to overmix; a few lumps are perfectly fine!
  4. Heat the Skillet: Heat a non-stick skillet over medium heat. If you like, add a little butter or oil to prevent sticking.
  5. Cook the Pancakes: Pour 1/4 cup of batter for each pancake onto the skillet. Watch closely as bubbles form on the surface—this is your cue to flip! Cook until golden brown, about 2-3 minutes each side.
