  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon dill or herbs of choice (optional)
  • Cooking spray or oil for greasing the muffin tin

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil to prevent sticking.
  2. Whisk the eggs in a large mixing bowl until well blended.
  3. Add the cottage cheese to the beaten eggs and mix until fully combined and creamy.
  4. Stir in the chopped vegetables along with salt, black pepper, and any optional herbs or spices.
  5. Pour the mixture evenly into the greased muffin tin, filling each cavity about 2/3 full.
  6. Place the muffin tin in the oven and bake for 20-25 minutes or until set and lightly golden on top.
