  • 1 cup milk (or a dairy-free alternative)
  • 1/2 cup protein powder (vanilla flavor recommended)
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)
  • 1 cup fresh blueberries
  • Cooking spray or oil for the pan

Instructions

  1. Whisk the flour, sugar, baking powder, and salt in a large bowl.
  2. Mix the milk, protein powder, egg, and melted butter in another bowl.
  3. Combine the wet ingredients into the dry ingredients and stir until just combined.
  4. Fold in the blueberries gently.
  5. Prepare a non-stick skillet over medium heat and lightly grease it.
