Delightful breakfast burritos filled with fluffy scrambled eggs, crispy bacon, and vibrant veggies that are perfect for busy mornings or leisurely brunches.

  • 6 strips bacon, chopped
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 8 large eggs
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Optional: Hash browns
  • Optional: Hot sauce
  • Optional: Avocado

Instructions

  1. In a nonstick pan, sauté the chopped bacon over medium heat until crispy. Remove and set aside.
  2. Using the same pan, add the diced bell peppers and tomatoes. Sauté for 2-3 minutes.
  3. Whisk the eggs in a bowl, then pour into the pan with the softened vegetables. Scramble until fluffy and cooked through for 3-5 minutes.
  4. Return crispy bacon to the pan and sprinkle with cheddar cheese, mixing gently until melty.
  5. Microwave the tortillas for about 20 seconds until warm and pliable.
  6. Spoon the egg and bacon mixture into each tortilla and roll up tightly.
  7. Toast the rolled burritos seam-side down until golden and crispy.
  8. Enjoy hot or wrap in foil for easy freezer storage.
