Delightful and fluffy egg bites that are perfect for busy mornings, packed with flavor and easy to make.

Ingredients

  • 6 large eggs
  • 1/4 cup milk (or cream)
  • 1/2 cup shredded cheese (cheddar, mozzarella, etc.)
  • 1/2 cup diced vegetables (bell peppers, spinach, etc.)
  • Salt and pepper to taste
  • Optional: cooked bacon or sausage

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs and milk until well combined.
  3. Stir in the shredded cheese and your choice of diced vegetables.
  4. Sprinkle with salt and pepper to taste.
  5. Pour the mixture into greased muffin tins, filling each cup about 2/3 full.
  6. Place them in the oven and bake for 12 minutes or until the egg bites are puffed and set.
  7. Allow to cool slightly, then gently remove each bite from the muffin tin.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.
