Delightfully fluffy pancakes made without flour, using cottage cheese and eggs for a protein-packed breakfast.

Ingredients

  • 4 large eggs
  • 1/2 cup almond flour
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Blend the cottage cheese and eggs until smooth.
  2. Mix in the almond flour, vanilla extract, baking powder, and salt until well combined.
  3. Heat a non-stick skillet over medium heat and pour the batter to form pancakes.
  4. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Serve warm with your favorite toppings.

Notes

Let the eggs come to room temperature before mixing for better rise. If batter is too thick, add a splash of milk.
