  • 4 chicken breasts
  • 200g mushrooms, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 100g cream cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the onion and garlic in olive oil until translucent, about 3-4 minutes.
  3. Cook the mushrooms until softened, about 5-6 minutes.
  4. Remove from heat and stir in cream cheese, salt, and pepper until creamy.
  5. Cut a pocket in each chicken breast; ensure not to cut all the way through.
  6. Stuff each chicken breast with the mushroom mixture.
  7. Bake in a dish for 25-30 minutes until cooked through and golden.
  8. Garnish with chopped parsley before serving.
