A comforting and easy-to-make baked chicken dish topped with creamy queso dip and zesty salsa, perfect for weeknight dinners or casual gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup salsa (mild or spicy)
  • 1 cup queso dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Optional: sliced jalapeños for added spice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix together garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper to create a spice blend.
  3. Pat the chicken breasts dry and rub the spice blend over both sides.
  4. In a large oven-safe skillet, heat olive oil and sear the chicken breasts for 3-4 minutes on each side.
  5. Remove from heat and pour salsa over the chicken.
  6. Spoon queso dip over the salsa-covered chicken.
  7. Sprinkle shredded cheddar cheese on top.
  8. Bake in the oven for 25-30 minutes until chicken is cooked through.
  9. Let the chicken rest for 5 minutes before serving.
  10. Garnish with cilantro and optional jalapeños before serving.

Notes

Serve with cilantro-lime rice or warm tortillas for a complete meal. Store leftovers in an airtight container for up to 3 days.
