A refreshing and vibrant salad featuring fluffy couscous, sweet-tart pomegranate seeds, and crumbled feta, perfect for summer gatherings.

Ingredients

  • 180 g couscous
  • 240 ml boiling water
  • 1/2 teaspoon salt
  • 100 g feta cheese, crumbled
  • 150 g pomegranate seeds
  • 50 g cucumber, diced
  • 1/2 small red onion, finely chopped
  • 10 g fresh parsley, chopped
  • 10 g fresh mint, chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove, minced
  • 1/4 teaspoon ground cumin
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the couscous and salt, then pour the boiling water over this mixture. Cover and let it sit for 5 minutes, then fluff with a fork.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, and black pepper until well emulsified.
  3. Fold the diced cucumber, chopped onion, parsley, mint, and pomegranate seeds into the fluffed couscous.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Scatter the crumbled feta over the salad and mix lightly. Serve chilled or at room temperature.

Notes

For added fiber, consider using whole wheat couscous. This salad can be made a day ahead; just hold off on adding the feta and dressing until serving.
