  • 1/2 cup bell pepper, diced
  • 1/2 cup cottage cheese
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin with cooking spray.
  2. Whisk together the egg whites, salt, and pepper in a bowl until frothy.
  3. Fold in the chopped spinach, diced bell pepper, and cottage cheese until well combined.
