A comforting and hearty dish, these Easy Porcupine Meatballs are perfect for bringing families together around the dinner table.

Ingredients

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1/2 cup onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 1 can (15 oz) tomato sauce
  • 1 cup beef broth
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Gather & Mix Ingredients: In a large bowl, mix together the ground beef, cooked rice, chopped onion, chopped green bell pepper, garlic powder, salt, and black pepper. Get your hands in there and form the mixture into meatballs.
  2. Prepare the Tomato Base: In a large pot, combine the tomato sauce and beef broth. Bring this mixture to a gentle simmer over medium heat.
  3. Simmer with Care: Add the formed meatballs into the pot. Cover the pot and cook on low for about 30-40 minutes.
  4. Serve & Savor: Once the meatballs are fully cooked and the sauce is bubbling, serve them hot.
