A comforting, hearty one pot dish perfect for busy weeknights or family dinners, combining chicken, rice, and mixed vegetables.

Ingredients

  • 1 lb chicken breast
  • 1 cup rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, etc.)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried herbs (thyme or oregano)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Add the chicken, cooking until browned on both sides.
  4. Stir in the rice, chicken broth, mixed vegetables, herbs, salt, and pepper.
  5. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  6. Fluff the rice with a fork and serve warm.

Notes

Use bone-in chicken for richer flavor and frozen veggies for convenience.
