A vibrant and flavorful taco recipe inspired by Mediterranean cuisine, featuring juicy chicken and fresh vegetables wrapped in warm tortillas.

  • 1 lb chicken breasts, diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 46 small tortillas
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced chicken to the skillet, then sprinkle with garlic powder, oregano, paprika, salt, and pepper. Stir well and let it cook for 6-8 minutes until tender.
  3. Warm the tortillas in a pan or microwave.
  4. Assemble the tacos by placing cooked chicken in the tortillas and topping with halved cherry tomatoes, cucumber, red onion, and feta cheese.
  5. Finish with a sprinkle of fresh parsley.
  6. Serve immediately and enjoy with friends and family.

Notes
