A delightful, creamy dessert that captures the classic flavor of eclairs without the fuss of baking individual pastries.

Ingredients

  • 240 millilitres water
  • 113 grams unsalted butter, melted
  • 125 grams plain flour
  • 4 large eggs
  • 226 grams cream cheese, softened
  • 2 x 96 grams boxes vanilla instant pudding mix
  • 480 millilitres heavy whipping cream
  • 240 millilitres Italian sweet cream coffee creamer
  • 226 grams whipped topping, thawed
  • Chocolate syrup, for drizzling

Instructions

  1. Preheat your oven to 200°C (400°F) and lightly grease a 23 x 33 cm baking dish.
  2. Melt the butter with the water over medium heat, then stir in the flour until combined.
  3. Add the eggs one at a time, mixing thoroughly after each addition.
  4. Spread the dough evenly in the prepared baking dish.
  5. Bake for 25 to 30 minutes until golden brown, then allow to cool completely.
  6. In a stand mixer, mix softened cream cheese. In another bowl, whisk vanilla pudding mix with heavy whipping cream and coffee creamer until thickened, then chill.
  7. Gradually add the pudding mixture to the cream cheese, mixing until creamy.
  8. Refrigerate the mixture to chill.
  9. Spread the chilled filling over the cooled crust.
  10. Add thawed whipped topping over the cream filling and smooth it out.
  11. Drizzle chocolate syrup over the whipped topping.
  12. Refrigerate until fully set before serving.

Notes

Serve with black coffee or tea. Pairs well with sliced strawberries or vanilla ice cream.
