Ingredients

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup blueberries

Instructions

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the fresh blueberries.
  4. Heat a skillet or griddle over medium heat and grease lightly.
  5. Pour 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm, drizzled with syrup or topped with your favorite garnishes.

Notes

For the fluffiest pancakes, make sure your baking powder and baking soda are fresh. If using frozen blueberries, add them directly to the batter without thawing.
