Delightful bites filled with juicy blueberries, reminiscent of summer memories. Perfect for breakfast or as an afternoon snack.

  • 1 cup fresh blueberries
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp melted butter

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the milk, egg, melted butter, and vanilla.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 15-20 minutes or until golden and a toothpick comes out clean.
  8. Let the fritter bites cool before serving.
