Ingredients

Scale
  • 1 cup Greek yogurt
  • 1/4 cup buttermilk (or kefir)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1 large egg, lightly beaten (optional for egg wash)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Whisk together Greek yogurt and buttermilk in a large mixing bowl until smooth.
  3. Sift in flour, baking powder, and salt into the wet mixture and stir until a dough forms.
  4. Gently fold fresh blueberries into the dough without breaking them apart.
  5. Divide the dough into 5 to 6 equal portions, form each into a ball, and create a hole in the center.
  6. Optionally, brush the tops with the beaten egg for a glossy finish.
  7. Bake in the preheated oven for 20 to 25 minutes until firm; broil for an additional 2 minutes for a golden crust.
  8. Allow bagels to cool completely on a wire rack before slicing and serving.

These bagels are best enjoyed fresh but can be stored in an airtight container for up to 3 days at room temperature.
