  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • White chocolate or almond bark (for coating)
  • Candy eyes (for decoration)
  • Small chocolate chips or cocoa powder (for the ‘nose’)

Instructions

  1. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and powdered sugar. Mix until well combined.
  2. Shape the mixture into small balls, about 1 inch in diameter.
  3. Melt white chocolate or almond bark in a microwave or double boiler.
  4. Dip each coconut ball into the melted chocolate to coat completely, then place on a parchment-lined baking sheet.
  5. While the coating is still wet, add candy eyes and a small chocolate chip or a sprinkle of cocoa powder for the nose.
  6. Allow to set until the chocolate hardens.
  7. Serve and enjoy this festive Easter treat!
