A simple and delicious Dump and Bake Chicken Tzatziki Rice, perfect for busy weeknights, combining tender chicken, tzatziki sauce, and fluffy jasmine rice in a convenient one-pan meal.

  • 1 pound chicken breast, cubed
  • 1 cup tzatziki sauce
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, add the cubed chicken and season with salt and pepper.
  3. Pour the tzatziki sauce over the chicken and mix well.
  4. Add the jasmine rice and chicken broth, stirring to combine.
  5. Scatter the cherry tomatoes and cucumbers on top.
  6. Drizzle with olive oil.
  7. Cover the dish with foil and bake for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
  8. Remove the foil and bake for an additional 10 minutes.
  9. Serve warm.
