These roasted potatoes, glazed with honey and adorned with crispy bacon, elevate comfort food to new heights.

Ingredients

  • 2 pounds baby potatoes
  • 4 slices of bacon, chopped
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. Drizzle olive oil over the halved potatoes, sprinkle with salt and pepper, and toss to coat.
  4. Spread the seasoned potatoes out on a baking sheet in a single layer.
  5. Cook the chopped bacon in a separate pan over medium heat until golden and crispy.
  6. Drain any excess fat from the bacon.
  7. Sprinkle the crispy bacon over the potatoes.
  8. Drizzle honey over the potatoes and bacon, then toss gently to combine.
  9. Roast in the oven for 25-30 minutes until crispy and golden brown.
  10. Garnish with fresh parsley before serving hot.

Notes

For extra crispy potatoes, add a tablespoon of cornstarch to the seasoning mix. Can prep potatoes ahead of time and store in the fridge.
