Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 8 cups chicken or vegetable broth
  • 1 cup cooked chicken, shredded
  • 1 cup cooked noodles or rice
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the Base: In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add the Veggies: Stir in carrots and celery, cooking for about 5 minutes until they start to soften.
  3. Pour in the broth: Bring to a boil, letting the hearty flavors begin to meld.
  4. Add shredded chicken, noodles or rice, thyme, salt, and pepper to the pot.
  5. Simmer for 15-20 minutes until all ingredients are heated through and flavors are well blended.
  6. Garnish with fresh parsley before serving. Enjoy!
