Warm, cheesy chicken enchiladas enveloped in zesty red sauce, perfect for family gatherings.

Ingredients

  • 2 cups Cooked and shredded chicken
  • 1 can Red enchilada sauce (10 oz)
  • 2 cups Shredded Monterey Jack cheese
  • 8 pieces Flour tortillas
  • 1 tablespoon Vegetable oil
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • To taste Salt and pepper
  • For garnish: Chopped cilantro
  • For serving: Sour cream

Instructions

  1. Prepare the chicken by shredding it into bite-sized pieces.
  2. Sauté the onion and garlic in vegetable oil until soft and fragrant.
  3. Combine the shredded chicken with seasonings in the skillet.
  4. Prepare the baking dish with a layer of red enchilada sauce.
  5. Fill the tortillas with chicken mixture, roll tightly, and place in the baking dish.
  6. Add remaining enchilada sauce and cheese on top.
  7. Bake covered with foil, then uncovered until bubbly and golden.
  8. Rest the enchiladas before garnishing with cilantro and serving with sour cream.

Notes

Using rotisserie chicken can save time. For a vegetarian option, substitute chicken with grilled vegetables.
