A hearty dish of tender beef soaked in sweet apple cider flavors, paired with creamy mashed sweet potatoes, perfect for family dinners.

  • 2 lbs beef chuck roast
  • 2 cups apple cider
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Season the beef with salt and pepper, then brown it on all sides in the skillet. Remove the beef and set aside.
  2. In the same skillet, add chopped onion and garlic, and sauté until soft.
  3. Return the beef to the skillet, pour in apple cider, cover, and simmer for 180 minutes, until the beef is tender.
  4. Meanwhile, boil sweet potatoes in salted water until tender. Drain and mash them with heavy cream, butter, and nutmeg.
  5. Serve the beef with creamy mashed sweet potatoes.

Notes

For the best flavor, choose high-quality apple cider that is not overly sweet. Consider adding herbs like thyme or rosemary, or a pinch of cayenne pepper for extra flavor.
