A rich and decadent dark chocolate mousse cake that combines fluffy mousse layers with a dense fudgy cake for a delightful dessert experience.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups heavy cream (for mousse)
  • 8 oz dark chocolate (for mousse)
  • 8 oz dark chocolate (for ganache)
  • 1 cup heavy cream (for ganache)
  • Sugar to taste (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans to ensure our chocolaty layers come out easily later.
  2. Mix together the flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry mixture. Using a hand mixer or a whisk, mix until well combined.
  4. Stir in the boiling water until the batter is smooth.
  5. Divide the batter evenly among the prepared pans. Bake for 30-35 minutes, or until a toothpick comes out clean. Allow to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
  6. Melt the dark chocolate for the mousse and let it cool slightly. In a separate bowl, whip the 1 1/2 cups of heavy cream until soft peaks form, then gently fold into the melted chocolate. Chill until set.
  7. Heat the 1 cup of heavy cream in a saucepan until just simmering. Pour it over chopped dark chocolate and let sit for a few minutes. Stir until smooth. Sweeten with sugar if desired.
  8. Assemble by layering cake and mousse on a serving plate, then pour the ganache over the top, letting it drizzle down the sides. Chill to set before serving.

Notes

Serve with whipped cream or vanilla ice cream. Can also be garnished with fresh berries.
