A comforting and simple dish that captures the essence of classic chicken pot pie without the fuss of a crust.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup green peas
  • 1 cup celery, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the onions, carrots, celery, and garlic. Sauté until tender, about 5-7 minutes.
  2. Stir in the cooked shredded chicken, thyme, rosemary, salt, and pepper. Cook for another couple of minutes.
  3. Pour in the chicken broth and bring to a gentle simmer.
  4. If desired, mix the flour with a little water to create a slurry and add to the skillet, stirring to combine.
  5. Add the green peas and continue to cook until heated through and sauce reaches desired thickness, about 5-10 minutes.
  6. Serve hot and enjoy!

Notes

For a thicker consistency, add a flour slurry; customize with your favorite vegetables or proteins.
