Delicious and crispy quinoa veggie patties, perfect for a wholesome snack or meal.

Ingredients

  • 1 cup cooked quinoa
  • 1 cup grated carrots
  • 1 cup chopped spinach
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 egg (or flax egg for vegan version)
  • 1 tsp cumin
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the cooked quinoa, grated carrots, chopped spinach, chopped onion, and minced garlic.
  2. Add the breadcrumbs, egg, cumin, salt, and pepper to the bowl. Mix until well combined.
  3. Shape the mixture into small patties.
  4. Heat oil in a skillet over medium heat.
  5. Fry the patties for about 3-4 minutes on each side until golden brown and crispy.
  6. Remove the patties from the skillet and place them on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.

Notes

Make sure your quinoa is well-drained to avoid soggy patties. Experiment with spices for added flavor.
